Peanut Butter Chocolate Buttercream Frosting

Great with Banana Cake. Give it a try. You will be in love.

Yield: Enough to frost and fill 2 8-inch cakes
Time: 10 minutes

Ingredients:

2 c. (4 sticks) butter (unsalted and room temperature)
2 c. peanut butter (smooth)
1/2 c. unsweetened chocolate (melted)
5 c. powdered sugar
2/3 c. cocoa (dutch-processed if you can find it)
1 Tbsp. vanilla extract
Pinch of salt

Mix ingredients: Mix all ingredients together in a large stand mixer (like a KitchenAid) with a whisk attachment.  Scrape down the sides and bottom with a rubber spatula at intervals as you mix so that all ingredients are throughly incorporated.  As ingredients become incorporated, gradually increase the speed of the whisk and beat until light and fluffy.
