Isomalt Butterflies

Learn to make isomalt butterflies that you can use to decorate cakes and other desserts.

Blue Butterfly and Flower Cake

They are beautiful on cakes because they shimmer and look glass.  How to video and products links are all included in this page.

This cherry blossom and panda cake uses some of the butterflies on white cloth covered floral wire at the top of the cake to convey a sense of whimsy as the pandas play in the field of flowers.

This blue butterfly and daisy cake uses butterflies on wooden skewers to give the illusion of flight.

So what is isomalt? It is a type of sugar made from beets. In this tutorial, we are using pre-cooked and colored isomalt sticks from Get Sassie in the ice blue. These sticks are really convenient and easy to use. I've shown a link here for clear sticks but they come in a rainbow of colors.
